Vegan Gluten-Free Peanut Butter Protein Cookies (not final)

Vegan, Gluten Free, and full of Protein!

These cookies are not super sweet, but they do pack a pretty awesome peanut butter punch. The batter is thick and the finished cookies hold their form really well, but still have a fluffy texture. The best part is, you can decorate with pretty much anything you want for fun tastes, textures and colors.

Ingredients

1 Tbsp coconut oil or unsalted butter, room temperature (do not use melted butter or oil. If coconut oil is liquidy, pop the jar in the fridge for 15 minutes until consistency of softened butter) (I use LouAna Coconut Oil)
1/2 C coconut sugar or light brown sugar (I use Trader Joe’s coconut sugar)
1/2 C natural peanut butter, room temperature (I use Trader Joe’s Valencia creamy peanut butter – I use unsalted, but salted works perfectly fine, just omit the extra salt in the recipe)
1 egg (vegan, use chia/flax egg)
1 tsp vanilla
1 Tbsp almond milk (I use Blue Diamond Unsweetened Vanilla)
1/2 C plant-based vanilla or peanut butter protein powder (I use Herbalife Peanut Cookie)
1/2 C all purpose flour (for gluten-free, I use Pamela’s gluten-free flour)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
any toppings you want to decorate your cookies!

 

Preparation

  1. Preheat oven to 300 F
  2. Cream coconut oil and sugar with mixer on medium until fluffy
  3. Beat in peanut butter
  4. Reduce speed to low. Beat in egg, vanilla, and almond milk
  5. In separate bowl, sift together protein powder, flour, baking soda, baking powder, and salt
  6. Add dry ingredients and beat on low until just combined
  7. Roll dough into 1″ balls and place them 2″ apart on baking sheet
  8. Flatten dough balls slightly with the palm of your hand
  9. Sprinkle any decorations you want on top of cookies, pressing them in lightly
  10. Bake 8-10 minutes or until edges are slightly browned
  11. Cool completely on wire racks
