WARNING! THESE ARE IN NO WAY HEALTHY. THEY ARE CRACK COOKIES.
These cookies are soft and sweet with a slight crisp around the edges and explode with rich chocolate chunks with a surprise tang of a touch of sea salt.
These are easy to make gluten free, but not vegan. This recipe really needs the egg for the correct texture. They are also very dependent on the temperature of your butter. It should be room temp (so it indents when you poke it, but your finger doesn’t slide or squish).

Ingredients
I C unsalted butter (use real butter, not margarine)
1 C packed brown sugar
1/4 C granulated white sugar
2 large eggs, at room temperature
1 Tbsp pure vanilla extract
1 Tbsp molasses
1.5 C all-purpose four
1 tsp baking soda
1.5 tsp ground cinnamon
1/2 tsp salt
3 C old fashioned rolled oats
12 oz bittersweet chocolate, roughly chopped (don’t use chips! They melt too much and you loose the point of biting into chocolate)
1 C walnuts (optional)
course sea salt for topping (I use this bourbon smoked sea salt that balances out the sweetness with a little extra depth of smokey flavor)
Preparation
- In medium bowl, whisk flour, baking soda, cinnamon, and salt, set aside
- With electric mixer, cream butter and both sugars until smooth, about 2 minutes
- Add eggs and mix on high until combined, about 1 minute
- Scrape down sides and bottom, then add vanilla and molasses and mix on high until combined
- Add dry ingredients and mix on low until combined
- Beat in oats and chocolate on low speed (dough will be thick and sticky)
- Cover and chill dough 30 minutes
- Preheat oven to 350*F
- Roll balls of dough (roughly 1.5 Tbsp per cookie) and place on parchment-lined baking sheets
- Bake 11 minutes (sides will be lightly browned and center will look underbaked)
- Remove from oven and immediately sprinkle with sea salt
- Let cookies cool on baking sheet for 5 minutes (cookies will continue to bake a bit), then transfer to wire rack to cool completely
