Chocolate Almond Biscotti

Biscotti was always something I was scared to try baking… it seems so mysterious and fancy. I got over myself and tried it anyway. And now, per request of my taste-testers, I cook a variation of it every holiday season. It lasts really well as long as you store it in a cool, dry place and in an air-tight container. Its surprisingly easy to make and is pretty forgiving for first-timers and experimenters, so try it out! You might surprise yourself.

Ingredients

Biscotti

1/2 C butter, softened
1 1/4 C granulated sugar
2 eggs
1 tsp almond or vanilla extract
2 1/4 C all-purpose flour
1/4 C unsweetened cocoa powder
1 tsp baking powder
1/4 tsp salt
1 C almonds (or mini chocolate chips)

Chocolate Glaze

1 C semi-sweet chocolate chips
1 Tbsp shortening

White Glaze

1/4 C white chocolate chips or white candy melts (I like Wilton)
1 tsp shortening

Preparation

Biscotti

  1. Preheat oven to 350 F
  2. Combine flour, cocoa, baking powder, and salt in medium bowl. Set aside.
  3. Beat butter and sugar in mixer on medium/medium-high speed until well blended.
  4. Add eggs and extract, beating well.
  5. Gradually add flour mixture, beating until smooth (dough will be thick).
  6. Stir in almonds
  7. Shape dough into two 11-inch long rolls and place 3 inches apart on un-greased baking sheet.
  8. Bake 30 minutes, or until rolls are set. Remove from oven and cool on cookie sheets for 15 minutes.
  9. Using a serrated knife, cut rolls diagonally into 1/2-inch slices using a sawing motion.
  10. Arrange slices cut-side down, close together on un-greased baking sheet.
  11. Bake 8-9 minutes, turn slices over, and bake an additional 8-9 minutes.
  12. Remove from oven and cool completely on the baking sheet on a wire rack.
  13. After biscotti is cool, prepare the chocolate glaze
  14. Melt the semi-sweet chocolate and shortening over low heat, stirring constantly.
  15. Dip one end of each biscotti in chocolate, gently knocking off excess, and place on on parchment paper. After all slices are dipped, drizzle leftover chocolate over entire biscotti.
  16. Next, prepare the white chocolate glaze – melt the white chocolate and shortening over low heat, stirring constantly.
  17. Drizzle over entire biscotti.
  18. Garnish with additional almonds, mini chocolate chips, etc. and let set.
  19. Store in refrigerator in airtight container.
