Gluten Free!
These cookies are thick, sweet, creamy, and come with a hit of caffeine that can’t be beat. They can easily be made gluten-free and taste almost exactly the same as the original. They are thick, hold their shape through baking, and freeze well, so don’t make them too big!

Preparation
- Preheat oven to 300 F
- Cream butter and sugars with mixer on medium until fluffy (about 30 seconds)
- Reduce speed to low. Beat in egg and vanilla for 30 seconds
- Sift together flour, baking powder, baking soda, salt, and instant espresso
- Add dry ingredients and beat on low for another 15 seconds
- Stir in chocolate chips
- Roll dough into 1″ balls and place them 2″ apart on baking sheet
- Flatten dough balls slightly with the palm of your hand.
- Bake 20 minutes or until edges are slightly browned
- Cool completely on wire racks
