Espresso Chocolate Chip Cookies

These cookies are thick, sweet, creamy, and come with a hit of caffeine that can’t be beat. They can easily be made gluten-free and taste almost exactly the same as the original.  They are thick, hold their shape through baking, and freeze well, so don’t make them too big!

Ingredients

1/2 C butter, softened
1 C light brown sugar
3 Tbsp sugar
1 egg
2 tsp vanilla extract
1 3/4 C all-purpose flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp instant espresso
1 1/2 C semi-sweet chocolate chips
1/2 C butter, softened
1 C light brown sugar
2 Tbsp sugar
1 egg
2 tsp vanilla extract
1 3/4 C gluten-free all-purpose flour (I use Pamela’s All-Purpose Baking Flour)
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 1/2 tsp instant espresso
1 1/2 C semi-sweet chocolate chips

Preparation

  1. Preheat oven to 300 F
  2. Cream butter and sugars with mixer on medium until fluffy (about 30 seconds)
  3. Reduce speed to low. Beat in egg and vanilla for 30 seconds
  4. Sift together flour, baking powder, baking soda, salt, and instant espresso
  5. Add dry ingredients and beat on low for another 15 seconds
  6. Stir in chocolate chips
  7. Roll dough into 1″ balls and place them 2″ apart on baking sheet
  8. Flatten dough balls slightly with the palm of your hand.
  9. Bake 20 minutes or until edges are slightly browned
  10. Cool completely on wire racks
