Lemon Poppy Seed Cookies

I have always been a fan of lemon poppyseed muffins. Every month when we were little, we would go to Perkins (remember those restaurants?!?) and got to pick out a muffin to take home with us. They had about 2 dozen choices, everything from caramel turtle pecan to apple cinnamon to blueberry crumble…. I ALWAYS picked lemon poppy seed. Apparently I was subconsciously drawn to the antioxidants… or I got addicted to the opium… either way, I still love lemon poppyseed and these cookies fill that craving.

Ingredients

1 C butter
1 C sugar
1 egg
1 tsp vanilla
2 tsp poppy seeds
1 tsp lemon peel, finely shredded/zested
1 tsp lemon juice
1/2 tsp lemon extract
2 C all-purpose flour
turbinado sugar
powdered sugar

Preparation

  1. In large bowl, beat butter with an electric mixer on medium-high for 30 seconds
  2. Reduce speed to medium. Add sugar, beating until combined.
  3. Beat in egg and vanilla until combined.
  4. Beat in poppy seeds, lemon peel, lemon juice, lemon extract, and as much flour as possible.
  5. Beat in as much flour as possible with the mixer. Stir in remaining flour.
  6. Cover and chill for 1-2 hours or until easy to handle.
  7. Preheat oven to 375 F
  8. Shape dough into 1-inch balls and place 2-inches apart on un-greased cookie sheet.
  9. Using bottom of glass dipped in turbinado sugar (using your hand, pat a tiny bit of water on the bottom of the glass – just enough to allow sugar to catch), slightly flatten balls to 1/2-inch thickness.
  10. Bake 8-10 minutes or until edges are firm and bottoms are lightly browned.
  11. Cool on cookie sheet 1 minute before transferring to wire rack to cool completely.
  12. Once cool, sift powdered sugar lightly over tops of cookies.
