Filet Stroganoff

I grew up loooooving beef stroganoff. Now that I am more health-conscious and lactose intolerant, I can’t have the traditional version, but I’ve since discovered how to make a more elevated (and healthier) version that I’m proud to serve to any adult.

Keep in mind that the quality of your meat and noodles make a huge difference in your final product.

Ingredients

1.5 C egg noodles (I like these Manischewitz medium egg noodles)
4.5 tsp olive oil, divided
2 Tbsp flour
1 C low-sodium beef broth
1/3 C greek yogurt or sour cream, at room temperature (I actually now use this Fage lactose free yogurt and it’s great)
1 tsp whole-grain Dijon mustard
1 tsp low-sodium soy sauce
1/2 tsp fine sea salt
1/2 tsp black pepper
2 tsp flat leaf parsley, chopped
12 oz filet mignon, trimmed and cut into 1/4-in slices, then 1.5-in pieces
1.5 lb brown or crimini mushrooms, trimmed and quartered

Preparation

  1. Cook noodles to al-dente according to package
  2. Heat 3 tsp oil in saucepan over medium heat
  3. Whisk in flour and cook, whisking constantly, for 1 minute
  4. Slowly add broth, whisking constantly and bring to a simmer
  5. Reduce heat to low and cook, whisking occasionally, for 3 minutes
  6. Remove from heat and whisk in yogurt (or sour cream), Dijon, soy sauce, salt, pepper, and 2 tsp parsley, cover and set aside
  7. heat remaining 1.5 tsp oil in large skillet over medium-high heat
  8. Cook filet, stirring occasionally, until just browned and still pink in center (1-2 minutes), then transfer to plate and cover
  9. Using same skillet with leftover filet juices, cook mushrooms until browned and tender, stirring occasionally (7-9 minutes)
  10. Remove pan from heat, then stir in filet (including any accumulated juices), cream sauce, and noodles to pan
  11. Serve immediately with sprinkle of parsley on top
